Initially the site was a sake brewery and in 1919 the distillery obtained the first whisky license in Japan. Expanding into different aspects of alcoholic beverages like wine, mirin, umeshu and shochu it would be until 1960 that this license was finally used.

The first releases would include only blended whisky expressions.

The first single malt expression of the distillery was launched in 2007, named “Akashi”. Whisky distillation is not taking part the whole year with the production remaining rather small: approximately 50,000 liters per year.
