Australia’s history in whisky distillation is long and goes back to 1791 when grain spirits were produced in Sydney. Several places along this vast country would experiment with whisky production in the following years.

People get tempted to create a new whisky distillery when they know that people ask for whisky. And that was exactly the case in Australia, since until World War II, Australia was importing more Scotch whisky than any other country in the world.

The whisky production industry expanded, with different places and distilleries to be the center of attention in different periods of time. This circle ended in the 80’s and a new era for Australia’s whisky production industry began.

In order to pass unique features in their products, distilleries started creating whiskies based in locality: Local grown barley, use of local peat in the kilning process, and newly designed yeast have led to different expressions.

Then the use of different types of casks for maturation and the use of casks that previously held Australian wines added more to a new-born character.

Well,since it’s such a big country with distilleries all across it, with variations in their distilling and maturation methods,it is almost impossible for a certain “Australian type of whisky” to be created. Lately, as it happened in Scotland, an island emerged and with over 8 distilleries contributes with more whisky profiles to explore: Tasmania.
